Garden Pasta
Your favorite veggie pasta, tossed with garden fresh vegetables and a light dijon sauce. Great with chicken, shrimp or scallops
Ingredients- 1 Tbsp olive oil
- 1/2 cup sliced green onions
- 3 minced garlic cloves
- 2 roma tomatoes (seeded and diced)
- 2/3 cup chicken broth
- 2 tsp dijon mustard
- 1 small diced yellow squash
- 1 small diced zucchini
- 1/2 cup chopped broccoli crowns
- 2 Tbsp fresh grated parmesan cheese
- 4 oz uncooked pasta (any of the veggie flavors are great)
InstructionsCook Pasta to al dente and set aside. Heat olive oil in hot pan. Add green onion, and broccoli and saute a few minutes. Add garlic, squash, zucchini and cook until vegetables are crisp-tender. Add pasta, chicken broth, and mustard and cook until warm. Toss in tomatoes and parmesan cheese, and serve.
